El Parlamento Europeo – Asociación Paraguaya de Croatas

El Presidente de la Asociación Paraguaya de Croatas Lic. Hugo Estigarribia Villasanti a invitación del Representante croata en el Parlamento Europeo, el Sr. Karlo Ressler visitó el Parlamento Europeo en Bruselas, capital de Bélgica.

Organizado por la Oficina del Miembro del Parlamento Europeo Karlo Ressler y la Escuela de Salud Pública “Andrija Štampar”, con motivo del 95 aniversario de la Escuela, una conferencia sobre salud pública y los principios de Andrija Štampar, el padre de la salud pública moderna, que reunió a destacados científicos y funcionarios croatas, europeos e internacionales.

El croata Andrija Štampar fue un visionario y científico adelantado a su tiempo. La crisis que trae incertidumbre, así como los grandes cambios globales provocados por las consecuencias de la pandemia del coronavirus, han vuelto a poner de manifiesto la importancia y el papel de la salud pública en Croacia y Europa. Por eso, con motivo del 95 aniversario de la fundación de la Escuela de Salud Pública, le dimos un reconocimiento especial al papel del ideólogo de la política de salud moderna.

Asi tambien, en el mismo día de la visita el Comité de la Unión Europea preaprobó el acceso de Croacia a la Zona Schengen, paso que nos adelanta a ser un país miembro estimandose el ingreso oficila para enero del 2023.

El espacio Schengen es una región de países europeos que no aplican controles fronterizos a los viajeros que circulan entre los Estados miembros.

Paragvajska udruga Hrvata predstavila je knjigu “Croatas en Paraguay – Hrvati u Paragvaju”

El libro “Croatas en Paraguay – Hrvati u Paragvaju” es una compilación que pretende relatar la historia de la inmigración croata en Paraguay, presenta datos demográficos, acontecimientos de la historia del Paraguay, la importancia de la inmigración, información sobre los primeros croatas en el Paraguay, además de una detallada línea de tiempo, así como apellidos croatas y sus historias familiares, los croatas en la Guerra del Chaco, las organizaciones croatas en el Paraguay, entre otros.

“…Imagino aquellos momentos en los que nuestros abuelos dejaban tras de sí sus tierras ancestrales, donde sus generaciones vivieron por miles de años en sus andanzas por la historia, y al voltear la mirada desde los grandes barcos, discurrían lágrimas de inmensa tristeza sin poder evitarlo… viajaron buscando algo… igual a lo que dejaban atrás…
 
Hace 100 años o un poco más, buscaron lo que yo diría el “yvy marane’y”, la tierra sin mal o tierra buena, lo cual implicaba una utopía en la mente de nuestros ancestros. Buscaban el “mbaéveráguasú”, la ciudad mítica, el paraíso fantástico… y aquel mundo fantástico fue una quimera, cuando salieron…
 
Cruzaron desiertos como algunos sabemos en ciertas historias, grandes desiertos pero de agua…
 
Cruzaron mares…, cruzaron océanos y llegaron a grandes e ignotos ríos…, también cruzaron el Jordán…
 
Llegaron a grandes ríos: recorrieron el río de la Plata, el gran río Paraná y, navegaron como imaginamos, el río Paraguay… antes, sin embargo, recalaron en Río de Janeiro, pero no les convenció…, seguían bajando…, Montevideo tampoco les convenció, para finalmente fondear en Buenos Aires, en el Rio de la Plata, pero siguió de largo un grupo de nuestros antepasados, hasta desembarcar convencidos aqui en Asunción…
 
Desde ese momento y por ese motivo yo debo honrar a esta patria, porque realmente esa tierra buena, esa tierra sin mal, el “yvy marane’y” nunca fue una utopía, era la tierra de promision, su tierra prometida…
 
 
El “mbaéveráguasú”, como conocemos aquí en Paraguay, no era una quimera, era real…
 
Este país los recibió con los brazos abiertos, y en este sentido, también es bueno recordar que los abuelos de esta tercera y cuarta generación que está aquí presente en este evento, llegaron asimismo a visitar esta casa del Director Lic. Vicente Arrúa (Archivo Nacional) que nos recibe amablemente, porque ya parte de la sociedad nacional participaron asiduamente como intelectuales, políticos, diplomáticos… fueron considerados hijos, no solamente hijos adoptados, sino legítimos hijos de la tierra… y como increíbles coincidencias en esa tierra de promisión se encontraron con colores que les eran conocidos, blanco y rojo, ellos a cuadros y nosotros franjeados; nuestro encaje ñanduti es el mismo en ambos continentes, con las mismas tejedoras y los mismos diseños; les unía una misma leyenda, la leyenda de San Blas, patrono de ambas tierras y por los mismos milagros; casualmente también les unía la tricolor bandera, roja, blanca y azul, los mismos colores patrios; por lo tanto, mis agradecimientos y respetos a todos ustedes, a esta gran familia, al dueño de casa, a nuestro gran amigo el Presidente de la Asociación Paraguaya de Croatas, a todos los presentes, porque todo lo que estoy con emoción dando en relación y más, se encuentra íntimamente referido en el libro que hoy presentamos, muchas gracias…

Continua la temporada de la cocina y gastronomía croata en la Aso!
Queremos invitarte a que formes parte de los talleres de cocina croata que estaremos
publicando semanalmente con el propósito de ir difundiendo un poco más de la
cultura gastronómica entre todos nuestros asociados!

COMIDA TRADICIONAL DE CROACIA

GULAŠ

Ingredientes:
1 kilo de carne vacuna (cordero, cerdo o pollo)
1/4 kilo de cebolla
Paprika c/n
Aceite de oliva c/n
2 hojas de laurel
Comino en grano
Extracto de tomate 3 cucharada por kilo de carne
Preparación:
Picar la cebolla (recomendable 1 kilo por cada kilo de carne.- opcional). Cortar la carne en cubos de
3 cm de largo.
En una cacerola grande calentar bien el aceite, agregar la cebolla hasta dorar a fuego fuerte.
Agregar una porción de paprika y revolver rápidamente para que no se queme.
Agregar la carne hasta sellar, salpimentar a gusto y bajar el fuego, agregar el resto de la paprika y
un chorro de vinagre de manzana, agregar caldo caliente y revolver esporádicamente.
Deja que el Gulaš se cocine a fuego bajo para obtener más tierno el preparado. Agregar el rox del
estrato de tomate, esto sirve como espesante, revolver bien, cocinar unos minutos y dejar reposar.
Luego estará listo para servir.
Obs: Preparación del Rox, manteca y harina, con este preparado agregar un poco de agua caliente
o caldo e integrar el extracto de tomate. 

COMIDA TRADICIONAL DE PARAGUAY

Entre recetas de comidas típicas de Croacia nos complace anunciar que compartiremos algunos de
los platos dulces y salados más tradicionales del Paraguay, los ingredientes y su modo de
preparado y así unir lo más rico de la gastronomia de nuestros países. Dobar tek – Buen provecho!

CHIPAGUASU

Chipá guazu – chipá=pan guazu=grande – pan grande, (choclo o maíz verde) desgranado.
La chipá guazú o pangrande tiene como principal ingrediente el maíz tierno
Junto a los demás ingredientes se muele, (procesar o licuar) el choclo o maiz
Desgranado y se realiza una mezcla perfecta que va al horno. Este es un plato que se sirve en
pedazos cuadrados como tarta.
Salado que puede acompañar con un trozo de carne o simplemente solo

Ingredientes:
1 kilo de choclo desgranado.
6 huevos.
12 litro de leche.
2 cebollas.
500 gramos de queso blando o paraguay.
150 cc. De aceite vegetal.
Sal a gusto.
Preparación:
Todos los ingredientes se procesa o licua y se vierte en asadera en mantecada. La preparación lo
realizamos en 10 minutos, el tiempo de cocción de 50 a 60 minutos
En horno pre calentado a una temperatura de 180°. Retirar del horno y dejar reposar unos minutos
antes de servir.

POSTRE

PUDIN DE NATILLA

El ingrediente principal, el licor de rosas, es la razón de su nombre regional de Rozata.


Ingredientes Crema:
1 litro de leche.
8 yemas de huevo.
250 gramos de azúcar.
1 cucharadita de vainilla.
Licor de Rosas c/n.

Ingredientes Caramelo:
200 gramos de azúcar.
2 Cucharadas de agua.
Preparación:

Se cuece lentamente a baño de maría, luego se cubre con una salsa de caramelo y se sirve con un
bañito de licor de Rosas.
Crema:
Calienta la leche, agregar azúcar y vainilla.
En un tazón batir las yemas de huevo y agregar a la leche. Cocinar a fuego lento. Resolviendo
constantemente.
Caramelo:
En una cacerola, agregue azúcar y agua, cocinar a fuego bajo a medio, hasta que el caramelo se
vuelva ámbar.
Vierta el caramelo en el fondo de un molde y agregue la crema, deje reposar en el refrigerador
durante3 horas. . Al servir bañar con un poco de licor de Rosas.
